I was wondering, what is the best way to deal with hems on latex clothing?

You dont need to hem latex,just make sure that everything your cutting is the same length that you want. Best to use a rotary cutter and a ruler and you'll be fine. Hope that helps.

Deviant is right, you don't have to. But it does add extra strength to the seams from wear and tear and makes it look more profesional. Hems are easier than you think. Just glue about a half inch, and carefully fold it on itself taking special care not to allow an air pocket on the fold. Flatten the seam with a roller, bubbles can be taken out with a needle.

The way I've seen professional latex garments made and the way that I've always done it is to cut a strip of sheeting about 1/4 of an inch that follows the countours of the hem (that way it doesn't buckle) and then glue it on.
Trim any areas where you went slightly over or under the base sheeting. Below is an example (the red trim would be the hemmed areas):
